Homemade Crêpes

Thin, golden crêpes with vanilla. A lump-free batter is the secret. Perfect for filling with dulce de leche, jam or fruit.
Ingredients
- 300 g (2⅓ cups) all-purpose flour
- 2 eggs
- 2 tbsp sugar
- A splash of vanilla extract
- 600 ml (2.5 cups) milk
- Butter for the pan

Mix flour and eggs
In a bowl, mix the flour with the two eggs.

Add the milk
Add the milk little by little while stirring continuously.

Whisk until smooth
Keep stirring until no lumps remain in the batter.

Add sugar and vanilla
Add the sugar and vanilla extract. Mix well.

Rest the batter
If you'd like, refrigerate the batter for a few minutes to let it settle.

Cook the crêpe
In a hot pan with a bit of butter, pour in a portion of batter and spread it evenly.

Brown and flip
Cook over medium heat until the edges look golden and the surface is slightly dry. Flip with a spatula and cook the other side until golden. Repeat with the rest.
Tips
- The butter in the pan is what gives them their signature flavor.
- Spread the batter quickly right after pouring so they come out thin and even.
- Perfect with dulce de leche, fruit, or sugar and lemon.
