Brazilian-Style Garlic Rice
The golden garlic rice that changes your life. Fluffy, fragrant, with real flavor. The secret is washing it well and toasting it before the water goes in.
- 2 measures of rice (washed 2 to 3 times until the water runs clear)
- 2 measures of hot water
- 4 cloves garlic
- Oil
- 1 tbsp salt

Prep the garlic
Peel the garlic cloves: trim both ends, cut in half and remove the skin. Chop them finely. Check that they're not dark inside.

Wash the rice
Wash the rice 2 to 3 times until the water runs clear. That's why afterward we only need 2 measures of water.

Brown the garlic
Heat oil in a skillet over high heat. Once hot, brown the garlic.

Toast the rice
Add the drained rice and toast it too, stirring, until it picks up a bit of color.

Cook the rice
Pour in the hot water and the tablespoon of salt, and let it cook 20 minutes over low heat, uncovered and without stirring.

Rest off heat
Turn off the heat, put the lid on, and let it finish cooking with the steam for 5 min.
- The secret is browning the garlic well before adding the rice.
- The water needs to be hot when you pour it in.
- Don't stir it while it cooks.
