Quesadillas
Corn or flour tortillas filled with melted cheese and ham. Crispy outside, with the melted cheese stretching inside. Ready in minutes.
- Corn or flour tortillas
- Shredded cheese (cheddar, mozzarella, or anything that melts well)
- Cooked ham (optional)

Heat the skillet
Heat a skillet over medium-high heat.

Toast the tortilla
Place a tortilla and lightly toast it for a few seconds on each side.

Fill with cheese
Remove the tortilla and set it on a clean surface. Sprinkle shredded cheese over half of it. Add chopped ham if you'd like.

Fold the tortilla
Fold the tortilla in half, covering the filling.

Brown and melt
Put the quesadilla back on the skillet and cook a few minutes on each side until the cheese melts and it's crispy and golden. Press down gently with a spatula.

Cut and serve
Remove, let it cool for a moment, cut into quarters, and serve with tomato sauce, guacamole or sour cream.
- Don't overfill it or it'll come open when you flip it.
- Pressing with a spatula helps the cheese melt evenly.
- With hot sauce or guacamole, they're a whole different thing.
