Classic Mojito

Rum, fresh mint, lime, sugar and soda water. The refreshing drink par excellence. The secret is gently muddling the mint to release its aroma without making it bitter.
Ingredients
- 45 ml (1.5 shots) white rum
- 8 to 10 fresh mint leaves
- Juice of 1 lime or lemon
- 2 tsp sugar
- 100 ml (⅓ cup + 1 tbsp) cold soda water
- Ice

In a glass, put the sugar and lemon juice. Add the mint leaves.

With a muddler or the back of a spoon, gently muddle the mint: release the essential oil without shredding it.

Fill the glass with ice. Add the rum and stir.

Top with cold soda water and stir once. Garnish with more mint and a lime wheel.
Tips
- Don't over-muddle the mint: it turns bitter and ruins the drink.
- Lime gives more aroma than lemon, though either works.
- Always heavily loaded with ice: colder = better drink.
