Peach pulp with champagne: the classic Italian brunch drink, sibling of the Mimosa.

- 15 ml (½ oz) peach pulp
- Very cold champagne, to top

Pour the peach pulp into a champagne flute.

Tips
- The original recipe uses white peach, more delicate than yellow: if you can find it, you'll notice the difference.
