Colombian Arepas

Crispy outside, soft inside, stuffed with melted mozzarella. Just four ingredients and they come out perfect.
Ingredients
- 2 cups pre-cooked white corn flour (e.g. PAN brand)
- 2 cups warm water
- 150 g (5.3 oz) mozzarella (to stuff)
- 1 tsp salt
- Butter for the pan

Make the dough
In a bowl, mix the warm water with the salt and the corn flour. Stir with your hand until it forms a firm dough that doesn't stick.

Shape the arepas
Form balls the size of a tangerine and flatten them with your palm to about 1 cm (0.4 in) thick.

Cook in the pan
Heat a pan over medium heat with butter. Cook the arepas 10 min on each side until golden.

Stuff with cheese
Cut them in half, stuff with mozzarella, and put them back on the pan for 2 to 3 more min until the cheese melts.
Tips
- If the dough turns out too dry, add warm water little by little.
- They're also good without cheese, just with butter and salt.
- Pre-cooked white PAN flour is the easiest to use and gives the best result.
